Chili's Southwestern Egg Rolls

ingredients

  • 2 chicken breasts
  • 2 Tablespoons vegetable oil
  • 4 Tablespoons minced red pepper
  • 1/2 Cup corn
  • 1/2 Cup black beans-rinsed and drained
  • 2 Tablespoons frozen spinach-thawed and drained
  • 2 Tablespoons diced canned jalapenos
  • 1 Tablespoon parsley
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Dash of cayenne pepper
  • 1 1/2 Cups shredded monterey cheddar
  • 6-8 inch flour tortillas

    Heat the oil in a large skillet.

    Dice the chicken into small pieces, then add to the skillet with the red pepper. Saute until chicken is cooked and pepper is tender. Add the remaining ingredients except the cheese and tortillas. Cook for 4 minutes making sure to break up the spinach. Remove from the heat and add the cheese, then stir until melted. Spoon mixture onto the tortillas. Wrap tight. Place seam side down on a baking sheet. Bake at 425* for 10-15 minutes or until golden and crispy, turning halfway through.
