Spicy Chinese Black Bean Szechuan Shrimp
ingredients
- 1 lb. Large Shrimp (16-20)
- 2 Cups Yellow Onion (Juilliened)
- 1 Cup Red Bell Pepper (Juilliened)
- 1 Cup yellow or Orange Bell Pepper (Juilliened)
- 1 Can Sliced Water Chestnuts
- 5 Cloves Minced Garlic
- 3 Tbl Fermented Black Beans Asian Style
- 1/2 Tsp. Salt
- 1/4 Cup Chicken Broth
- 1 Tsp. Chicken Bouillon (Better Than Bouillon)
- 1 1/2 Tbl. Oyster Sauce
- 1/2 Tbl. Lan Chi Chili Paste With Garlic
- Peanut Oil for Stir Fry
- Pinch of Sugar

1. Shell, de-vein, and pat dry shrimp.Mix in Marinade. Marinate in fridge for 10 minutes.

2. Heat 2 Tsp. oil in wok over high heat. Stir fry black beans, garlic and chili paste for a few seconds and then add shrimp. Stir fry until translucent, remove to a plate.

3. Heat 1 Tbl. oil in wok over high heat. Stir fry onions, red bell pepper. Add some chicken broth if too dry. Add salt Oyster Sauce, and sugar. When onions are cooked thru , return shrimp and mix well. Serve over Jasmine Rice.

Marinade: 1 Tbl. Peanut Oil 1 1/2 Tbl. Cornstarch 1 Tbl. Water. 1/4 Tsp. Salt 1 Tsp. White Pepper
