PEACH COBBLER
ingredients
- 1 1/2 pounds of fruit (peaches, strawberries & rhubarb, whatever), peeled, stoned, and sliced
- 5 tablespoons sugar
- A good splash balsamic vinegar
- For the topping:
- 4 ounces butter, chilled
- 8 ounces self-rising flour (or all-purposed flour plus 1/2 t baking power)
- 2 1/2 ounces sugar
- A large pinch salt
- 4 1/2 ounces buttermilk
- A little sugar, for dusting
- Vanilla ice cream
