Crustless Ham And Vegie Quiche
This is a great low fat breakfast. The cottage cheese in this recipe makes it oh, so, gooey and creamy.
ingredients
- Cooking spray
- 3/4 cup (4 ounce) cubed smoked turkey ham
- 1/2 cup chopped onion
- 1/8 tsp. fresh ground pepper
- 1/4 cup roasted red pepper from a jar; cut into small pieces (save the rest for a later use)
- 3/4 cup shredded Swiss cheese; divided
- 1 cup fresh baby spinach leaves
- 1 cup fat-free cottage cheese
- 1/2 cup evaporated fat-free milk
- 1/4 cup shredded reduced-fat cheddar cheese
- 2 large eggs
- 2 large egg whites
- 1/2 cup all-purpose flour
- 1 tsp. baking powder

1. preheat oven to 350°

2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add ham, onion, roasted red pepper and ground pepper to pan; sauté 4 minutes or until ham is lightly browned.

3. Sprinkle 1/4 cup shredded Swiss cheese in a 9-inch pie plate coated with cooking spray. Top with ham mixture.

4. Combine remaining 1/2 cup Swiss with cottage cheese, milk, cheddar, eggs and egg whites in a large bowl; stir with whisk.

5. Combine flour and baking soda in a small bowl. After it is mixed, add flour mixture to egg mixture. Stir until blended. Pour egg mixture over ham mixture. Bake at 350° for 45 minutes or until set in the middle.
