- 1.5 lbs. green beans, trimmed
- Vinaigrette:
- 1 T. red-wine vinegar
- 1 large shallot, cut lengthwise in half and then into paper thin slices
- Fine sea salt and ground black pepper
- 1/4 cup olive oil
