Grandma Elvah Rogers Lemon Sunshine Pie
Grandmother Elvah Lawry Rogers was a wonderful cook. Some of us “older” kids will remember the home cooked smells and sights of holidays at the house on 24 west. Her beautiful white hair and smiling face is an imprint in all of our histories. This is in her handwriting.
ingredients
- 1/2 Tablespoon of plain gelatine
- 1/3 cup cold water
- yolks of 4 eggs
- 1/2 cup sugar x 2
- 3 tablespoons of lemon juice
- grated rind of half a lemon
- whites of 4 eggs
- whipped cream
- pinch of salt

Soak 1/2 Tbsp. gelatine in 1/3 cup cold water.

Add the beaten yolks of 4 eggs, add 1/2 cup sugar and beat until light. Add 3 Tbsp. grated lemon rind. Cook yellow mixture in double boiler until creamy, stirring constantly, add a pinch of salt. Fold in gelatine and remove from fire and cool. Stir to keep from getting lumpy. Beat whites with pinch of salt until stiff add 1/2 cup of sugar folding in a little at a time. Then fold white mixture into yellow. Put in a baked shell. Put in icebox and serve with whipped cream.
