Crumpets
Not a pancake, not an English Muffin but a nice breakfast treat.
ingredients
- 1/2 cup warm water (105-115)
- 2 tsp sugar or honey
- 1 T active dry yeast
- 2 1/2 cups all purpose flour
- 1 tsp salt
- 1/2 tsp baking soda
- 1 1/2 cups milk

In a large bowl, stir sugar or honey into warm water. Sprinkle yaast over the top and let sit until it bubbles (5 minutes). Stir in remaining ingredients. Cover and let sit for about half an hour in a warm place.

Grease a griddle or frypan and the crumpet rings . (Shallow cans such as for tuna are fine) Place the rings on the pan and preheat. Pour 3 tablespoons of batter into each 3 inch ring. Cook over low heat until set about ten minutes. Avoid cooking too fast. The top should be full of holes when they are done. Remove crumpets from the rings and brown the other side for a minute or so. Serve warm with butter, jam or clotted cream and jam.

These can also be the base for cream cheese, ham and scrambled egg.

These are a Seattle treat. Use any 3 inch rings.The Seattle Loen boys love these.
