Sausage Basil Lasagna

ingredients

Sauce
  • 2 Tbl olive oil
  • 1 lb spicy Italian sausages, casings removed
  • 1/2 medium yellow onion, diced
  • 1 Tbl garlic, minced
  • 2 tsp dried oregano
  • 1/4 tsp crushed red pepper
  • 1 (28 ounce) can crushed tomatoes with puree
  • 1 (14.5 ounce) can diced tomatoes with green pepper and onion, not drained
Filling
  • 1 1/2 cups packed fresh basil leaves
  • 1 (15 ounce) container part skim ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp pepper
Assembly
  • 12 uncooked lasagna noodles
  • 3 cups grated mozzarella cheese
  • 1 cup grated Parmesan chees
  • Cooking spray

This lasagna can be assembled and refrigerated overnight, or it can be baked ahead and reheated in a 350 degree oven.
