Campfire Potatoes

As served for shore lunch at the GUARDIAN EAGLE RESORT, De Lesseps Lake, Ontario Canada

  • 6-8 medium Potatoes

  • 8 oz. Bacon

  • 1 large Onion

  • Seasoning Salt

  • Par-boil potatoes, in jackets. Set aside to cool.

  • Cut bacon into ½ inch slices. Slice or cut into chunks 1 large onion.

  • Cut cooled potatoes into 1 inch cubes.

  • In a large skillet or wok, fry bacon until almost done. Add onions and fry until slightly brown. Remove most of bacon and onions with a slotted spoon, leaving grease in pan.

  • Add potatoes to pan. Fry potatoes until golden brown. Adding seasoning salt, to taste preference. Return bacon and onions to potatoes and mix and toss until well blended.

  • Serve hot.
