Campfire Potatoes

ingredients

  • 6-8 medium Potatoes
  • 8 oz. Bacon
  • 1 large Onion
  • Seasoning Salt

    Par-boil potatoes, in jackets. Set aside to cool.

  • 2

    Cut bacon into 1/2 inch slices. Slice or cut into chunks 1 large onion.

  • 3

    Cut cooled potatoes into 1 inch cubes.

  • 4

    In a large skillet or wok, fry bacon until almost done. Add onions and fry until slightly brown. Remove most of bacon and onions with a slotted spoon, leaving grease in pan.

    Add potatoes to pan. Fry potatoes until golden brown. Adding seasoning salt, to taste preference. Return bacon and onions to potatoes and mix and toss until well blended.

    Serve hot.
