Taryn's and Jon's Burritos
Jon and I kind of made this recipe up in college, based off one of our favorite Mexican restaurants in Boulder.
ingredients
- Part I
- 1 lb chix (cooked or grilled and sliced thin)
- 3/4 cup rice
- 1 can black beans
- 1 can refried beans
- 1/2 cup frozen corn
- 1/2 cup (or more) of your fav salsa
- 1/2 can green chilli sauce
- Part II
- Burrito size tortillas
- Colby jack cheese, shredded
- 2-3 cans green chili sauce

Cook chix and rice. De-thaw corn and heat up refried beans (so they are easier to work with.) Mix all the above ingredients in part I together.

Part II (Wrap it up)

Place part I filling on tortilla, top with shredded cheese and fold it up. Place each burrito in a 9 x 13 dish coated with cooking spray. Fit the burritos in nice and snug, then smother with green chili sauce and top with shredded cheese. Bake at 350 degrees until bubbly.
