Leftover Thanksgiving Turkey Soup
ingredients
- Turkey carcass
- bay leaf
- 4 stalks of celery
- 2 onions, chopped
- 2 cubes chicken boullion
- salt and pepper to taste
- Lawry’s seasoninig salt to taste
- Parlsey to taste
- carrots
- tomatoes and/or
- any other veggies you desire
- 1- 2 cups of Minute rice

Place carcass in a large stock pot and cover with water. Add 1st 7 ingredients and bring to a boil. Reduce heat and simmer for a couple of hours.

Remove carcass and return the meat to the pot. Add vegetables - simmer additional 30 minutes. Bring to a boil again - remove from heat and add minute rice - cover and allow to stand for 5 minutes.
