Kate's Spinach, Sausage and Basil Lasagna
ingredients
- 1 qt spaghetti sauce
- 1 lb Italian sausage, ground
- 2 tsp dried sage
- 2/3 cup chopped onion
- 2 Tbsp chopped garlic
- 1 (15 oz.) container Ricotta
- 1 egg, beaten
- 1 pkg. 6 cheese Italian blend, shredded
- 1 bunch fresh basil
- 1 bunch fresh spinach
- 1/4 tsp nutmeg
- 1/2 cup Parmesan cheese

Preheat oven to 375°F.

In a saucepan brown ground sausage, onion and garlic; drain excess fat; add spaghetti sauce, sage and 1 cup water; bring to a boil.

In a large bowl mix together Ricotta cheese, beaten egg, Italian cheese blend, 1/3 cup water and nutmeg.
Layer and Assemble

Use lasagna strips uncooked but rinse in hot water before layering in a 9“x13” baking pan.

1. 1 2/3 cup sauce, lasagna strips, 1/2 cheese mixture, basil and spinach leaves

2. 1 2/3 cup sauce, lasagna strips, rest of cheese mixture, basil and spinach leaves

3. 1 2/3 cup sauce, lasagna strips, remaining sauce

4. Top with 1/2 cup Parmesan cheese

Bake at 375°F, covered tightly with aluminum foil for 40 minutes. Remove foil and bake for 15 more minutes. Let stand for 5 to 10 minutes before cutting.
