CRAIG'S SHRIMP
We have cut down the amount of butter from the original recipe (to less than half). Also, we don’t add the shrimp until all the broth is made - we think the shrimp are more tender this way.
ingredients
- 1 stick butter
- 1 t black pepper
- 1 t ground red pepper
- 1/2 t salt
- 1/2 t each-rosemary, thyme & red pepper flakes & oregano
- 2 t Worcestershire
- 6-8 oz clam juice
- 4-6 oz beer (dark preferred)
- 1-2 lbs shrimp (21-25/lb size)shell on preferred
- loaf of crusty bread

In large skillet on med/high heat, melt 1 stick butter, then add all dry seasonings - roast these, stirring often for 1-2 minutes

- then add the Wo sauce and clam juice & cook & stir for 3-5 minutes

-then add the beer & cook another 2-3 minutes

-add the shrimp (shell on) and cook 2-3 minutes (depending on size)

-Serve shrimp & broth in small bowels with chunks of crusty bread (and lots of paper towels)

The original Paul Prudholme recipe has a lot more butter and a lot more pepper.
