Gumbo
Mom’s gumbo
ingredients
- 2 cans chicken broth
- 2 cans sliced stewed tomato
- 1/2 cup chopped bell pepper
- 1/2 cup chopped onion
- 4 Tablespoons margarine
- 2 Tablespoons flour
- Frozen sliced okra
- Shredded chicken, shrimp, sausage
- 1 Bay leaf

In pan melt 4 tbs of margarine. Stir in bell pepper and onion. Add flour and stir till light brown. Add chicken broth, tomato, okra, and meat.

Cook 1 hour. Add water if needed. Add a bay leaf in about 10 minutes before you serve & remove. Serve over rice.
