Tortilla De Patatas (Spanish Omelette)

Try this low-fat, no-mess shortcut for a delicious Tortilla Espanola.
I make this for catering clients as well as my own guests and they love it.
Use whatever variety of potatoes and onions you can find locally. Some people like to add green or red pepper.

ingredients

  • 1 pound of potatoes (any variety)
  • drizzle of olive oil
  • 4-6 eggs (depending on size)
  • 1 1/2 cups chopped onion
  • 1 generous pinch salt
  • pepper to taste
  • 2 1/2 Tablespoons of oil
