Baked Eggplant

ingredients
- 1 large eggplant
- 2 medium onions, chopped
- 3 cloves garlic, chopped
- 1 tsp oil
- 6 slices bread, moistened
- 1 egg, slightly beaten
- 6 slices bacon (optional)

Preheat oven to 350°.
- 2
Peel eggplant and cut into pieces. Boil in salted water until tender.

Sauté onions and garlic. Blend all other ingredients together and add onions and garlic.

Spoon into a greased baking dish. Optionally, top with bacon slices.

Bake for 1 hour.
