Jodi's Jalapeño Cheese French Toast

from Jodi Paul. This is an excellent brunch treat.

  • 2 slices jalapeño cheese bread, about ½" thick

  • 2 eggs

  • ½ teaspoon cajun seasoning

  • 2 tablespoons grated pepper jack cheese

  • 2 tablespoons salsa

  • 2 tablespoons chopped green onions

  • 2 tablespoons chopped tomato

  • 2 teaspoons sour cream or plain yogurt

  • 2 teaspoons finely chopped cilantro

  • Beat the eggs with the cajun seasoning, in a medium bowl. Dip the bread into the egg, and allow the egg to soak into the bread.

  • Cook the bread in a large frying pan sprayed with cooking spray until golden brown and crisp around the edges.

  • Top with grated cheese, salsa, green onions, tomato, sour cream and cilantro. Serves 2.
