Axeman's 15 Bean Soup
The first time I had this was at a gathering, and the entire pot was devoured in less than 20 minutes.
ingredients
- 1 pkg 15 Bean Soup Mix (Hambeen brand; discard seasoning)
- 1 pkg Large Lima Beans (16 oz)
- 2 large onions, chopped small
- 1 full bulb garlic, peeled and crushed
- 2 14 oz cans tomatoes
- 10 Serrano Peppers, cored, seeds removed, finely diced
- 3 Poblano Peppers, cored, seeds removed, finely diced
- 1 tsp Basil
- 2 tsp Cumin
- 1 tsp Sage
- 1 Tbs salt
- 1 Tbs Pepper
- 4 Tbs lemon Juice

Wash and sort beans. Cover with water and 1 Tbs Salt, soak overnight.

Drain and rinse beans. Add 10 cups water. Bring to a boil and simmer for 2 hours. Keep stirring.

Add all ingredients (except lemon juice) to soup pot, and simmer while stirring occasionally for 1/2 hour. When the soup is fully cooked, you can roughly puree about a third of the soup. Add lemon juice and stir before serving. Very best topped with a dollop of sour cream.

Wear gloves when working with these peppers.
