Axeman's 15 Bean Soup
The first time I had this was at a gathering, and the entire pot was devoured in less than 20 minutes.
1 pkg 15 Bean Soup Mix (Hambeen brand; discard seasoning)
1 pkg Large Lima Beans (16 oz)
2 large onions, chopped small
1 full bulb garlic, peeled and crushed
2 14 oz cans tomatoes
10 Serrano Peppers, cored, seeds removed, finely diced
3 Poblano Peppers, cored, seeds removed, finely diced
1 tsp Basil
2 tsp Cumin
1 tsp Sage
1 Tbs salt
1 Tbs Pepper
4 Tbs lemon Juice
Wash and sort beans. Cover with water and 1 Tbs Salt, soak overnight.
Drain and rinse beans. Add 10 cups water. Bring to a boil and simmer for 2 hours. Keep stirring.
Add all ingredients (except lemon juice) to soup pot, and simmer while stirring occasionally for ½ hour. When the soup is fully cooked, you can roughly puree about a third of the soup. Add lemon juice and stir before serving. Very best topped with a dollop of sour cream.
