ingredients

  • 4c bread flour
  • 2 pkg yeast
  • 1T + 1t sugar
  • 10T butter
  • 2t salt
  • 1c lukewarm milk
  • 1 egg
  • 1 to 2 pounds grated cheese (colby, cheddar, mozzarella, provolone, etc.)

    Preheat oven to 375°.

    Take 1/2c warm milk. Sprinkle 1t sugar and yeast on top. After 3 minutes stir until dissolved. Set aside for 8-10 minutes or until doubled in volume.

    Make a deep well in 3 cups flour. Pour in 1/2 cup milk, 1T sugar, 2t salt, 8T soft butter and the yeast mixture. Beat until smooth. Gather into ball and place on floured surface. Knead for 10 minutes, adding flour as needed. Place in large bowl, cover and allow to rise 1 hour. Punch down and set aside for 40 minutes.

    Filling: mix together cheese, 1T butter per pound of cheese, and 1 egg.

    Roll bread into a 22 inch circle, drape over a 8 inch pan. Place filling in center, fold and knit bread over the top. Set aside for 10 minutes.

    Bake for 1 hour. Cool, slice and enjoy.
