Jodi's Vegetarian Chili

True Texas chili, vegetarian style.

  • 1 cup onion(s)

  • 1 bell pepper(s)

  • 2 clove garlic clove(s)

  • 28 oz canned crushed tomatoes

  • 1½ can or bottle beer

  • 2½ cup water

  • ½ cup uncooked bulgur

  • 1 envelope Chili Seasoning Mix

  • 3 Tbsp ground cumin

  • 2 Tbsp hot pepper sauce

  • 2 cans Chili Beans

  • 7 Boca Original Vegan Burger

  • 3 tsp Carmel Kosher Beef Broth

  • Microwave the burger patties on a plate, about 5 minutes, or until cooked through. Allow to cool.Meanwhile, very finely chop the onion and bell pepper (using a food processor works really well for this).

  • In a large stockpot, sauté the onion, bell pepper and garlic in olive oil spray about 10 minutes, until onions are clear.Roughly puree the canned tomatoes, and add to the pot.

  • Using the food processor, grind the cooked burger patties, and add to the pot.

  • Add all remaining ingredients to the pot, stir and simmer for about 30 - 45 minutes, until bulgur is cooked through. Add the chili beans and stir. Serve over rice or Fritos.

  • May be topped with chopped onion, green onion, cheese, sour cream, etc.
