Broccoli Casserole
from Grandma Meschkat (Ellie Meschkat)
ingredients
- 1/2 cup onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/4 cup bell pepper, finely chopped
- 2 Tbsp margarine
- 1 small can evaporated milk
- 1 can cream of mushroom soup
- 1 bunch fresh or 1 box frozen broccoli, cooked and drained
- 1 cup cooked rice
- 1 cup grated cheese
- salt and pepper to taste

Preheat oven to 350 degrees.

Saute onion, celery and bell pepper in margarine until onions are clear. Blend in soup and evaporated milk.

Mix in with broccoli and rice. Add salt and pepper to taste.

Bake in casserole dish sprayed with cooking spray for 30 minutes.

Remove dish and top with grated cheese. Return to oven for about 5 minutes, or until cheese is melted and bubbly.
