ingredients
- 3/4 cup apple juice
- 1 lb sweet potatoes, peeled & sliced 1/4 in thick
- 1 medium cooking apple, coursely chopped
- 1/8 cup dried cranberries
- 2 Tbl maple syrup
- 2 Tbl rum
- 1/4 tsp salt
- 2 Tbl chopped toasted hazelnuts or walnuts
- Optional: fresh tarragon sprig
