Beer Battered Shrimp with Chipotle Honey

ingredients

  • For shrimp:
  • 1 cup all purpose flour
  • 1 1/2 t. cayenne pepper
  • 1 t. salt
  • 1/2 t. baking powder
  • 1 t. granulated sugar
  • 8 oz. beer
  • Flour for dusting
  • 3-4 cups peanut oil for frying
  • 1 1/4 pounds rock shrimp or peeled white shrimp
  • For sauce:
  • 2 chipotle chiles, stemmed and seeded 1 tomato, cored and cut in quarters
  • 1/2 small onion, peeled and sliced 1 clove garlic, peeled
  • 1/2 cup water
  • 1 teaspoon salt 1/4 cup honey
  • 2 T. red wine vinegar
