  • 2 Tbl Olive Oil
  • 1 large red onion, chopped
  • 2 cans original chicken broth
  • 1 can garlic seasoned chicken broth
  • 1 can diced tomatoes
  • 1 small can diced green chilis
  • 1 tsp ground cumin
  • 1 1/2 tsp garlic powder
  • 4 chicken boullion cubes
  • 1 Tbl sugar
  • 2 cups frozen corn
  • 1 can dark red kidney beans
  • 1 Rotisserie chicken - deboned and cut up
  • 1 bunch fresh cilantro - chopped
  • Chili pepper to taste
  • Optional: Tortilla chips & Colby/Jack cheese
