Jodi's Navrathan Korma (Mixed Vegetable Curry)
A lighter version similar to navrathan kurma.
ingredients
- 1 cup plain fat-free yogurt (I’ve started using coconut milk and like it better than yogurt in this recipe)
- 2 Tbsp raisins
- 1 cup green snap beans
- 1 cup cooked carrots
- 3/4 cup onion(s)
- 1 cup cooked frozen green peas
- 1 bell pepper(s)
- 2 1/2 cup potato, red, white
- 1 1/2 cup tomato(es)
- 1/4 cup cilantro
- 2 cup cooked brown rice
- 4 Tbsp Patak’s Hot Curry Paste 2T
- 2 containers Breakstone’s Live Active cottage cheese

Microwave vegetables until cooked tender-crisp. Add remaining ingredients and stir until combined. Microwave until heated through and vegetables are cooked.

While vegetables are cooking, blend curry paste with yogurt or coconut milk. Stir all together when vegetables are done.

You can either serve the vegetables over rice, or stir it all together into a “casserole”
