ingredients

  • 3 Tbsp butter
  • 1 1/2 Tbsp flour
  • 1 cup half & half or light cream
  • 4 Tbsp dry sherry
  • 1/2 tsp paprika
  • 1 egg yolk
  • 1 tsp Cognac
  • hot sauce
  • ground pepper
  • 1 lb medium shrimp,peeled and deveined (or 12 oz crab meat)

    In large skillet melt butter over medium heat. Add flour and cook, stirring constantly, about 1 minute. Whisk in cream, sherry and paprika. Bring to a boil and cook, stirring, until mixture is smooth and thick, about 3-4 minutes.

    Remove from heat. Whisk a small amount of the sauce into the egg yolk until smooth, then pour the egg yolk mixture back into the pan and stir until smooth. Add Cognac, hot sauce and pepper.

    Lower heat. Stir in shrimp and cook, stirring constantly until shrimp are pink, 2-3 minutes. Do not allow sauce to boil.

    Serve over rice.
