Blueberry Muffins
a sugary muffin full of blueberries
ingredients
- 2 cups fresh/frozen bluberries
- 1 7/8 cups flour
- 1 teaspoon cinnamon
- 1/4 cup flaxseed eggs
- 1/4 cup olive oil
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1 cup rice milk
directions
Line muffin pans with paper cases. Mix dry ingredients and fold in wet ingredients. Stir until mixed. Stir in blueberries. Spoon batter into muffin tins until 2/3 of the way full. Bake in a preheated oven at 400° for 20 minutes or until golden brown. Do not over bake.
