Deva’s Veggie Thai Curry
ingredients
- 1 block firm tofu
- 1/4 C. fresh basil
- 3 Potatoes (white or sweet)
- 2 Green/Yellow or Red Peppers
- 1 can baby corn
- 1 small can bamboo shoots
- 2 cans light Coconut Milk
- 2 T. Red Curry Paste (more to taste)
- 3 Tablespoons sugar
- Fish Sauce- just a few shakes of the bottle
- 1 can veggie stock
- 2 cups cooked basmati cups rice
