Sweet and Sour Veggie Stir-Fry
1 Tbsp. olive oil
½ or full head bok choy, washed, trimmed, & cut into 1" pieces
1 sliced sweet onion
8-10 shiitake mushrooms
1 large sweet potato, peeled, quartered, and sliced thinly (~¼")
1 red or yellow bell pepper, seeded and sliced into strips
⅛ c. packed Splenda brown sugar substitute
½ tsp. minced fresh ginger root
1 Tbsp. cornstarch
1 Tbsp. soy sauce
¼ c. red wine vinegar
Heat oil in large skillet, add bok choy, onion, mushrooms, sweet potato, and bell pepper. Cook and stir over medium high heat 4-5 minutes. Blend sugar, vinegar and ginger; add to skillet. Mix well. Cover and steam 2 minutes. Combine soy sauce and cornstarch with ½ cup water. Add to skillet. Cook and stir until thickened.
Serve by itself or over ⅓ cup brown rice or grain of your choice.
