Sweet and Sour Veggie Stir-Fry

  • Heat oil in large skillet, add bok choy, onion, mushrooms, sweet potato, and bell pepper. Cook and stir over medium high heat 4-5 minutes. Blend sugar, vinegar and ginger; add to skillet. Mix well. Cover and steam 2 minutes. Combine soy sauce and cornstarch with ½ cup water. Add to skillet. Cook and stir until thickened.

  • Serve by itself or over ⅓ cup brown rice or grain of your choice.
