Sweet and Sour Veggie Stir-Fry
ingredients
- 1 Tbsp. olive oil
- 1/2 or full head bok choy, washed, trimmed, & cut into 1" pieces
- 1 sliced sweet onion
- 8-10 shiitake mushrooms
- 1 large sweet potato, peeled, quartered, and sliced thinly (~1/4")
- 1 red or yellow bell pepper, seeded and sliced into strips
- 1/8 c. packed Splenda brown sugar substitute
- 1/2 tsp. minced fresh ginger root
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 1/4 c. red wine vinegar

Heat oil in large skillet, add bok choy, onion, mushrooms, sweet potato, and bell pepper. Cook and stir over medium high heat 4-5 minutes. Blend sugar, vinegar and ginger; add to skillet. Mix well. Cover and steam 2 minutes. Combine soy sauce and cornstarch with 1/2 cup water. Add to skillet. Cook and stir until thickened.

Serve by itself or over 1/3 cup brown rice or grain of your choice.
