  • 1/2 or full head bok choy, washed, trimmed, & cut into 1" pieces
  • 1 sliced sweet onion
  • 8-10 shiitake mushrooms
  • 1 large sweet potato, peeled, quartered, and sliced thinly (~1/4")
  • 1 red or yellow bell pepper, seeded and sliced into strips
  • 1/8 c. packed Splenda brown sugar substitute
  • 1/2 tsp. minced fresh ginger root
  • 1 Tbsp. cornstarch
  • 1 Tbsp. soy sauce
  • 1/4 c. red wine vinegar
