Pound Cake
A dense cake made with flour, eggs, sugar and butter. The cake takes its name from a traditional recipe that called for one pound of each ingredient to be mixed in order to make two cakes.
ingredients
- 3/4C (168g) Butter (softened)
- 4 ounces (112g) Cream Cheese (softened)
- 1 1/2C (300g) Sugar
- 2t (8g) Vanilla
- 1 1/2C Cake Flour
- 3 Eggs

Preheat oven to 325°.

Grease and flour a loaf pan.

Cream together the butter, cream cheese, and sugar.

Stir in the vanilla.

Add the flour and the eggs alternately, beginning and ending with the flour.

Pour batter into the prepared pan.

Bake for 1 hour and 15 minutes - 1 hr 30 min or until a toothpick inserted in the center comes out clean.
notes
If you don't have cake flour you can substitute all-purpose flour but use 3T less. Instead of 2t of vanilla you can use 1 1/2t (6g) vanilla and 1/2t (2g) almond extract. Recipe can be doubled and made in a 10 inch tube pan.
