Skillet Upside Down Cake
ingredients
topping- 1/3 cup butter
- 1 1/2cup brown sugar
- pineapple slices
- 1/2 cup butter
- 1 cup sugar
- 2 eggs, beaten
- 1 tsp vanilla
- 2 cups cake flour
- 1/2 tsp salt
- 2 1/2 tsp baking powder
- 3/4 cup milk

1. Melt butter in heavy iron skillet. Add brown sugar and then pat pineapple slices into sugar.

2. Cream 1/2 cup butter, add sugar. Mix until fluffy.

3. Add eggs and vanilla and beat thoroughly.

4. Sift cake flour, salt and baking powder.

5. Add dry ingredients to creamed mixture alternately with milk and beat until smooth.

6. Bake at 350 degrees for 50 minutes. Invert immediately onto plate.
