Nut Brittle
Flat pieces of hard sugar candy mixed with nuts - tastes of butter and caramelized sugar
ingredients
- 1C (124g) Nuts
- 2T (28g) Butter (softened)
- 1t (5g) Baking soda
- 1C (200g) Sugar
- 1/2C (164g) Light Corn Syrup
- 1/4t (1g) Salt
- 1/4C (60g) Water

Line a 9x13 inch pan with foil and then parchment paper.

Spread out the nuts on the parchment paper. (If you use salted nuts omit the salt in the recipe.)

Measure out the butter and baking soda and set aside.

In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved.

Set candy thermometer in place, continue cooking, and stir frequently.

When temperature reaches 300°F remove from heat and immediately stir in butter and baking soda.

Pour at once into prepared pan.

Let brittle cool and then snap into pieces.

This recipe can be made with any kind of nuts such as peanuts, pecans, almonds, or walnuts. The nuts can be added with the butter and baking soda if you prefer that they be more incorporated into the brittle.
