Monkey Bread

a.k.a. Banana Bread

  • 1C (200g) Sugar

  • ½C (112g) Butter (softened)

  • 1t (4g) Baking Soda

  • 2 Eggs

  • 3-4 Bananas

  • 2C (250g) Flour

  • ½C (62g) Walnuts, Chopped (optional)

  • Preheat oven to 325°.

  • Grease and flour a loaf pan.

  • In a small bowl, mash the bananas.

  • In a large bowl, cream the sugar and butter.

  • Stir in the baking soda.

  • Stir in the eggs.

  • Stir in the bananas and mix until smooth.

  • Mix in the flour and stir until just combined.

  • Fold in the walnuts (if using).

  • Pour batter into prepared loaf pan.

  • Bake for 1 hr 15 min - 1 hr 30 min.

  • After the bread has been baking for one hour place a piece of foil over the top to prevent it from getting too brown.

notes:

This recipe can also be used to make mini muffins or regular muffins. Bake mini muffins at 375 degrees for 13 minutes. Bake regular muffins at 350 degrees for 20-25 minutes.
