Monkey Bread
a.k.a. Banana Bread
1C (200g) Sugar
½C (112g) Butter (softened)
1t (4g) Baking Soda
2 Eggs
3-4 Bananas
2C (250g) Flour
½C (62g) Walnuts, Chopped (optional)
Preheat oven to 325°.
Grease and flour a loaf pan.
In a small bowl, mash the bananas.
In a large bowl, cream the sugar and butter.
Stir in the baking soda.
Stir in the eggs.
Stir in the bananas and mix until smooth.
Mix in the flour and stir until just combined.
Fold in the walnuts (if using).
Pour batter into prepared loaf pan.
Bake for 1 hr 15 min - 1 hr 30 min.
After the bread has been baking for one hour place a piece of foil over the top to prevent it from getting too brown.

This recipe can also be used to make mini muffins or regular muffins. Bake mini muffins at 375 degrees for 13 minutes. Bake regular muffins at 350 degrees for 20-25 minutes.
