Chocolate Peanut Butter Sandwich Cookies
Chocolate cookies with peanut butter filling
ingredients
Cookies- 1/2C+2T (140g) Butter (softened) (10 Tbsp.)
- 1C (200g) Sugar
- 1 1/4C (156g) Flour
- 1/2C (43g) Cocoa
- 1t (4g) Baking Soda
- 1/4t (1g) Baking Powder
- 1/4t (1g) Salt
- 1 Egg
- 3/4C (194g) Peanut Butter
- 3/4C (90g) Powdered Sugar
- 3T (42g) Butter (softened)
- 3T (45g) Cream

COOKIES:

Preheat oven to 375 degrees.

Line cookie sheets with parchment paper.

In a medium bowl cream the butter and sugar.

Add the flour, cocoa, baking soda, baking powder, and salt. Stir to mix.

Add the egg and stir until combined and smooth.

Use a small cookie scoop to form teaspoons of dough and place them on the prepared cookie sheet. (Up to 14 cookies per sheet.)

Use your fingers to slightly flatten each ball of cookie dough.

Bake for 8 minutes.

FILLING:

Using an electric mixer, combine the peanut butter, powdered sugar, and butter.

Add the cream and beat until smooth. (Be careful not to over beat or filling will become too dry.)

Assembly: Match cookies of similar size. Roll a tablespoon of filling into a ball, place filling on the flat side of one of the cookies, lightly press the second cookie over the filling working the filling to the edge.
