Old Fashioned Chicken Soup

ingredients

  • 3 Stalks celery
  • 3 Medium carrots, scraped or peeled
  • 3 Medium potatoes, peeled
  • 1 medium onion
  • 1 Tbsp olive oil
  • 1/2 C. Green onion, chopped fine
  • 1/4 C. chopped parsley
  • 2 1/2 C. (3 Qt) water or chicken stalk
  • 1 pinch of thyme
  • 2 tsp to 3 tsp salt
  • 6 chicken thighs to 6 pcs of boneless skinless chicken
  • 1 C. Cooked noodles (optional)

    Diced celery, carrots, potatoes and onion; set aside. Place the onion in a dutch oven with a few tbsp of olive oil. Cook until the onion is soft. Add the remaining ingredients except the noodles. Bring to a boil, reduce the heat and simmer 1 to 1 1/2 hours.

    Remove the chicken from the soup and cut into bite sized chunks. Add noodles if desired and heat thoroughly before serving.
