OVEN FRIES WITH ROASTED GARLIC
A delicious way to have the french-fry experience without all that pesky fat.
ingredients
- 3 large Yukon Gold potatoes, halved lengthwise and cut into 1/2 inch thick wedges
- 8 unpeeled garlic cloves
- 3 T olive oil
- salt and pepper
- 2 t chopped thyme
- 1/4 c parsley

Preheat oven to 425.

On a large rimmed baking sheet, toss potatoes and garlic with olive oil. Spread in even layer, cut sides down. Season with salt and pepper and sprinkle with thyme.

Bake for 30 minutes or until potatoes are browned on the bottom and very crisp. Peel garlic cloves. Transfer to platter, sprinkle with parsley and serve.
