ROMESCO SAUCE
An all-purpose dressing from Spain. Excellent with grilled meats or veggies.
ingredients
- 2 red bell peppers
- 1 28-oz can whole plum tomatoes, undrained
- 2 garlic cloves, peeled¬¬
- cooking spray
- 1/2 C dry breadcrumbs
- 2 T slivered almonds, toasted
- 2 T chopped fresh Italian parsley
- 2 T vegetable broth
- 2 T white vinegar
- 1 t crushed red pepper (to taste)
- 1 T olive oil
- 3/4 t Spanish smoked paprika
- 1/2 t salt

Preheat oven to 275.
- 2
Roast red peppers on stovetop until charred. Cover for 10 minutes, then peel away the charred skin. Seed and coarsely chop.

Combine tomatoes and garlic in baking dish coated with cooking spray. Bake at 275 for 2 1/2 hours, or until most of the liquid has evaporated.

Combine all ingredients in food processor and process until smooth.
