BAKED SPICY SRIRACHA CHICKEN WINGS

We make these to accompany watching the Superbowl. Think conventional TV snacks, with an Asian flair. Goes really well with lager.

ingredients

  • 10 lbs chicken wings, split
  • 1/4 C coriander seeds, crushed
  • 1 t cumin seeds, crushed
  • 1 t cinnamon
  • 2 T kosher salt
  • 1/4 C extra virgin olive oil
  • 3/4 cup Sriracha sauce
  • 1 1/2 sticks (12 T) melted butter (unsalted)
  • 1/2 C chopped cilantro
  • finely grated zest and juice of 3 limes

    In a very large bowl, toss the wings with the coriander, cumin, cinnamon, salt and olive oil. Cover and refrigerate at least 4 hours or overnight.

    Preheat oven to 375. Spread the wings on three large, rimmed baking sheets. Roast for 1 1/2 hours, until crispy and golden.

    Wash out the bowl. Add Sriracha, butter, lime zest and lime juice. Add the wings and toss well.

    Transfer to a platter, serve hot.
