Roasted Chicken Salad
ingredients
- 1 rotisserie chicken, cooled, skinned and cut into 1-inch chunks
- 1 ripe mango, sliced
- 2 green onions,sliced
- 1 red or yellow pepper, sliced
- 2 -3 tbsp. mayonnaise
- 1 tsp. hot chili paste or sweet Thai chili sauce
- juice from 1 lime
- 1 tsp. sesame oil
- salted cashews
- Romaine lettuce leaves, washed and ribs removed
- cilantro for garnish

In a bowl, stir together the mayonnnaise, lime juice, chili paste (or chili sauce), and sesame oil.

In another bowl, combine the chicken chunks, mango, green onions and peppers. Add the mayonnaise mixture to the chicken, folding gently with a spatula.

Just prior to serving, stir in the cashews. Serve on Romaine lettuce leaves, and garnish with cilantro.
notes
Measurements are approximate. Can cut up Romaine and stir into salad too.
