SPICY PASTA E FAGIOLI
A delicious traditional pasta dish with a spicy punch.
¼ C extra virgin olive oil
2 cloves garlic, minced
1½ t fresh black pepper
¼ t dried red pepper flakes
½ c finely chopped onion
one 2-oz can anchovies – rinsed, drained and chopped fine
two 15-oz cans of white beans, with their liquid
¼ lb small pasta
3 C veggie or chicken broth
¼ C chopped fresh parsley
½ C freshly grated parmigiano reggiano
1 T lemon juice, or more to taste
salt to taste
Cook the pasta until it is almost done.
In a large pot, heat olive oil over medium-high heat. Sauute garlic, black pepper, and red pepper flakes for 30 seconds. Add onion and anchovies; sauté until the onion is soft and translucent, about 2 minutes.
Add the beans with their liquid, the pasta, and the stock. Let the mixture come to a boil, reduce the heat, and simmer for 5 to 10 minutes. Add salt to taste, the parmigiano, and lemon juice. Add salt to taste and serve.
