SPICY PASTA E FAGIOLI

A delicious traditional pasta dish with a spicy punch.

ingredients

  • 1/4 C extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 1/2 t fresh black pepper
  • 1/4 t dried red pepper flakes
  • 1/2 c finely chopped onion
  • one 2-oz can anchovies – rinsed, drained and chopped fine
  • two 15-oz cans of white beans, with their liquid
  • 1/4 lb small pasta
  • 3 C veggie or chicken broth
  • 1/4 C chopped fresh parsley
  • 1/2 C freshly grated parmigiano reggiano
  • 1 T lemon juice, or more to taste
  • salt to taste

    Cook the pasta until it is almost done.

    In a large pot, heat olive oil over medium-high heat. Sauute garlic, black pepper, and red pepper flakes for 30 seconds. Add onion and anchovies; sauté until the onion is soft and translucent, about 2 minutes.

    Add the beans with their liquid, the pasta, and the stock. Let the mixture come to a boil, reduce the heat, and simmer for 5 to 10 minutes. Add salt to taste, the parmigiano, and lemon juice. Add salt to taste and serve.
