SPICY PASTA E FAGIOLI
A delicious traditional pasta dish with a spicy punch.
ingredients
- 1/4 C extra virgin olive oil
- 2 cloves garlic, minced
- 1 1/2 t fresh black pepper
- 1/4 t dried red pepper flakes
- 1/2 c finely chopped onion
- one 2-oz can anchovies – rinsed, drained and chopped fine
- two 15-oz cans of white beans, with their liquid
- 1/4 lb small pasta
- 3 C veggie or chicken broth
- 1/4 C chopped fresh parsley
- 1/2 C freshly grated parmigiano reggiano
- 1 T lemon juice, or more to taste
- salt to taste

Cook the pasta until it is almost done.

In a large pot, heat olive oil over medium-high heat. Sauute garlic, black pepper, and red pepper flakes for 30 seconds. Add onion and anchovies; sauté until the onion is soft and translucent, about 2 minutes.

Add the beans with their liquid, the pasta, and the stock. Let the mixture come to a boil, reduce the heat, and simmer for 5 to 10 minutes. Add salt to taste, the parmigiano, and lemon juice. Add salt to taste and serve.
