MOROCCAN CARROT SALAD
This unusual savory salad is a great accompaniment to roast chicken, baked fish, or just about anything, really. Goes especially well with Mediterranean menus.
ingredients
- 1 lb carrots, cut into sticks
- 3 T olive oil
- juice of 1 lemon
- 2-3 garlic cloves, crushed
- 2 t sugar
- 1-2 t cumin seeds, roasted
- 1 t ground cinnamon
- 1 t paprika
- small bunch of fresh coriander, chopped
- small bunch of mint, chopped
- salt and pepper
directions
Steam carrots over boiling water for about 15 minutes, or until tender. While they’re still warm, toss in a serving bowl with the olive oil, lemon juice, garlic and sugar. Season to taste, then add the cumin seeds, cinnamon and paprika. Finally, toss in coriander and mint, and serve at room temperature.
