Gypsy Goulash

ingredients

  • 2 Tbsp olive oil
  • 2 small onions, chopped
  • 1 1b veal, in 1 1/2 inch cubes
  • 1 1b lamb, in 1 1/2 inch cubes
  • 1 1b beef, in 1 1/2 inch cubes
  • 1 Tbsp flour
  • 1/4 tsp pepper
  • 3 Tbsp Hungarian paprika
  • 1 tomato, seeded and chopped, OR 1 Tbsp tomato paste
  • 1 1/2 tsp parsley
  • 1 C. water
  • 1 C. low sodium beef or chicken broth

directions

Heat olive oil in a Dutch oven and saute onions until transparent, stirring occasionally. Add meat and cook for 10 minutes. Sprinkle with flour and stir well. Add seasonings, tomato, parsley and broth. Increase water, if necessary, so that the meat is covered by the broth. Cover and bring to a boil. Reduce heat and simmer slowly, stirring occasionally, until meat is tender and sauce has thickened (about 1 1/2 -2 hours). Serve with noodles, spaetzle or potatoes. Serves 6
