- 2 CUPS PUMPKIN SEEDS, SHELLS LEFT ON, FIBERS RUBBED OFF (N0T WASHED)
- 1 T. PEANUT OIL
- 1t BUTTER
- 1 1/2 tsp. KOSHER OR OTHER COARSE SALT
directions
PREHEAT OVEN TO 250 DEGREES. COMBINE ALL INGREDIENTS IN A SMALL BOWL AND MIX WELL. SPREAD ON BAKING SHEET AND TOAST STIRRING FREQUENTLY, ABOUT 30 OR 40 MINUTES, OR UNTIL SEEDS ARE EVENLY BROWNED AND CRISP.COOL, THEN STORE IN TIGHTLY COVERED CONTAINER.
