Steak and Cheese Stuffed Poblano Peppers over Rice

This dish has been referred to as “Stuffed Peppers of Love” by my sweetie and is THE go to dish both in times of celebration and crisis. It has been instrumental is getting me out of the doghouse on numerous occasions. Hopefully it will become a favorite of yours as well.

ingredients

  • 4 Poblano Peppers (fresh)
  • 1 12oz package Queso fresco (Casique brand or similar)
  • 1 lb flat iron steak (sirloin or similar will work as well)
  • 1 bunch cilantro (about 1 cup)
  • 2 cups basmati rice
  • 1 10oz can Ro*Tel Tomatoes
  • 12 oz Light Sour Cream
  • 1 lime
  • 1 TSP butter
  • 1 tsp cumin powder
  • 1 tsp chili powder
