Boiling the garlic gives it a mellow flavor that lends just the right amount of punch.

ingredients

  • 4 baking potatoes (about 2 lbs)
  • 1 head garlic, broken into cloves and peeled
  • salt and pepper
  • 3/4 C skim milk
  • 1 1/2 T extra virgin olive oil

    Peel the potatoes and cut them into 1/2 inch pieces. Place them and the garlic in a large, heavy pot with salted water to cover. Bring to a boil, reduce the heat, and simmer 8 to 10 minutes, or until the potatoes are soft. Drain in a colander.

    Return the potatoes to the pan and cook over medium heat for a minute or so, stirring with a wooden spoon, to evaporate any water. At the same time, heat the milk gently until warm.

    Mash the potatoes with a masher or put them through a food mill. (Do not use a food processor.)

    Add the oil (if using) and enough milk to make the potatoes fluffy and creamy. Season with salt and pepper. Serve at once.
