TIGGA DIGGA (SENEGALESE GROUND NUT STEW)
One of the most famous dishes from Senegal, this thick, tasty stew balances the richness of ground nuts (peanuts) with veggies and tangy fruit juices.
ingredients
- 2 C chopped onions
- 2 T canola oil
- 1/2 t cayenne pepper
- 1 t chopped garlic cloves
- 2 C chopped cabbage
- 3 C cubed sweet potatoes (1 inch cubes)
- 3 C tomato juice
- 1 C apple juice
- 1 t salt
- 1 t minced or grated fresh ginger
- 1 T chopped fresh cilantro
- 2 chopped tomatoes
- 2 C chopped fresh okra
- 1/2 C peanut butter

Saute the onions in the oil for about 10 minutes.

Stir in cayenne and garlic and sauté for a couple more minutes. Add cabbage and sweet potatoes and sauté for a few more minutes. Mix in the juices, salt, ginger, cilantro and tomatoes. Cover and simmer for about 15 minutes, until the sweet potatoes are tender.

Add the okra and simmer for 5 minutes more.

Stir in the peanut butter and simmer very gently until ready to serve. Add more juice or water if the stew is too thick.
