Dark Chocolate Chipotle Cookies

ingredients
- 3 cups all-purpose flour 1 T. baking soda
- 1 t. salt
- 2 cups unsalted butter, cut into 1-inch cubes, softened
- 2 cups light brown sugar
- 1 1/2 cups sugar, plus 1/2 cup for topping
- 1/2 cup cocoa powder, sifted
- 2 t. crushed, dried chipotle peppers 4 eggs
- 1 T. vanilla
- 1 T. water
- 1/2 lb. high-quality bittersweet chocolate, melted and cooled slightly
- 1 1/2 cups high-quality bittersweet chocolate chips or chunks, plus 1/2 cup for topping
