ASIAN BARBECUE SAUCE
Great for meat on the grill. Use as you would any other BBQ sauce.
ingredients
- 2 T canola oil
- 2 T chopped garlic
- 2 T minced ginger
- 2 serrano chiles
- 2 T salted black beans
- 1 red onion, roughly chopped
- 1 T Sambal or other chile paste
- 2 C peeled tomatoes, chopped
- 1/4 C rice wine vinegar
- 1/2 C soy sauce
- 1/2 C palm sugar (substitute brown sugar)
- salt and pepper to taste

Heat oil in a wok or skillet. Add garlic, ginger, chiles, black beans, and onions. Saute until brown, about 8 minutes.

Add Sambal and tomatoes; stir.

Add vinegar and deglaze the pan by stirring with a wooden spoon to incorporate any brown bits from the bottom of the pan into the sauce.

Add soy sauce and sugar.

Transfer to a blender or food processor; blend until smooth.

Chill at least three hours (can be made the night before using).
