INDONESIAN SPICY SHRIMP

This makes an excellent seafood dish as part of an Asian feast. Beware: it’s hot!

ingredients

  • 1 medium red bell pepper, cored, seeded and coarsely chopped
  • 5-10 serrano chiles (to taste), seeds removed and coarsely chopped
  • 1-2 t paprika (to taste)
  • 2 T canola oil
  • 2 medium shallots, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 1 lb medium shrimp, shelled and deveined
  • salt to taste
  • lime wedges

    In a food processor, blend red bell pepper, chiles and paprika into a paste. If necessary, add a tablespoon of water while processing.

    Heat oil in skillet. Add shallots and garlic and cook until translucent. Stir in the pepper paste and sauté for 3-4 minutes to release the flavors. Add water 1 tablespoon at a time, if necessary to prevent the paste from sticking to the pan and burning. Stir in shrimp and cook, stirring, until pink and opaque. 3-4 minutes. Season with salt.

    Serve hot or at room temp. with jasmine rice. Serve with lime wedges.
