Baked Macaroni and Three Cheese Caserole
ingredients
- 1 pound Elbow Macaroni
- 4 tablespoon Butter
- 2 medium Zucchini, sliced
- 6 ounce Mushrooms, sliced
- 1 Red Pepper, 1/2 inch pieces
- 2 Cloves Garlic, chopped
- 1 quart Milk
- 1 teaspoon Salt
- 1/2 cup Sour Cream
- 1 teaspoon Worcestershire
- 1 1/4 cup Shredded Swiss
- 1/2 cup Parmesan Cheese
- 1 large Onion, chopped
- 1/4 cup Flour
- 1/4 teaspoon Nutmeg
- 1 1/2 cup Shredded Cheddar

Cook Macaroni and set it aside

Saute zucchini and mushrooms in oil and two tablespoons of butter, set aside

Saute onion, pepper and garlic in two tablespoons of butter, set aside

Sprinkle with flour and cook for four minutes while stirring

Stir in milk and bring to a boil

Reduce to low head, add salt and nutmeg then remove from heat

Add sour cream

Toss all sauted ingredients and place in a buttered 13x9 pan.

Mix cheddar and swiss together, stir in all but 1/4 cup of mixture.

Top with remaining 1/4 cup and the Parmesan cheese.

Bake at 400˚ for 45 minutes.
